Then come the recipes, and there are a lot – one I’m excited about is sausage and gamefoul baked in a deep dish with batter! When I picked up a copy of this book in a store and flipped through it I almost decided not to buy it – all I saw was talk of fearnlry-whittingstall and text that I didn’t find particularly interesting at the time – but so glad I bought The River Cottage Meat Book.

Prep 20 mins Cook 20 mins. Also recommended are his other books. Like its predecessor, Fearnley-Whittingstall’s attack is carefully researched, revelatory and powerful. A variety of excellent recipes are included in the second half of fearnleyw-hittingstall book which are easy to follow and cover a variety of different types of meat.

In light of all that, it’s fair to say that this book was not so much surprising as exactly what I hugy looking for at the time. We’ve never been fans of gloopy, flour-thickened pie fillings. And looking forward to game birds come fall. More than you can digest? Don’t be put off by the long list of ingredients: Fearnley-Whittingstall turns out to be as zealous a cook as he is a reformer, equally able to appreciate the simplicity of Irish stew or a good beefburger, or to lead people through the intricacies of pork pie or cider-cured ham. This is on my purchase list.

I suspect that he got near the end of the book and they realized this behemoth was going to outgrow the binding, The section on preserving meat is rife with references to the River Cottage cookbook.

This may not be quite as quick as opening a jar of ready-made curry sauce but it tastes far better.

For an ex-vegetarian this is a must-read and allways-by-your-side-book-in-the-kitchen. Humans inevitably affect animals and vegetarians are no different.

A mixed agricultural economy efarnley-whittingstall uses meat thriftily and integrates arable and livestock fearnleg-whittingstall – with the animals’ manure feeding the soil so that the crops will grow to feed the animals in turn – is efficient, sustainable and protective of the landscape. It is systematically abusive.
